Half-browned banana

Putting a banana in the freezer causes it to brown quickly and smoothly. But what would happen if the banana was... submerged in ice? Long story short, if you put half a banana in water and the other half is exposed to the freezer air, it will only brown half-way. Don't show it to the RC's though, or they'll make you throw it out!
